Tamale Pie has been a long time favorite of both the cowboys and the guests at Rankin Ranch. We want to share our family recipe with you. Helen Rankin enjoyed cooking and entertaining guests. This gave her the vision for Rankin Guest Ranch which she opened in 1965. Over 50 years later our family still enjoys having guests from around the world visit us for a few days in the county.

Tamale Pie – recipe from Helen Rankin – 3rd Generation Rankin
Ingredients:
3 Tablespoons Oil
1 white onion, chopped
1 1/2 cups diced Ortega chilies
3 tomatoes, chopped
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon seasoned salt
2 Tablespoons spaghetti sauce seasoning
2 1/2 pounds Rankin Ranch Ground Beef (order now)
2 cups tomato sauce
30 ounces canned corn
6 cups Krusteaz cornbread mix
3 cups water
Directions: Preheat oven to 350 degrees. Saute onions, chilies, and tomatoes in oil. Add seasonings and set aside. Brown Rankin Ranch ground beef and drain drippings. Mix sauteed mixture, tomato sauce, corn, and beef; simmer to blend flavors. Pour meat mixture into baking pan and set aside. Combine cornbread mixture and water with electric mixer until smooth. Spoon cornbread batter over meat mixture. Bake at 350 degrees for 45 – 60 minutes or until topping is golden. Enjoy your Tamale Pie!
